Born in the North of England the origins of my passion for food may surprise you. My Dad, who repaired sewing machines for a living, was far more adventurous when it came to food, and his passion for exploring the use of spices and herbs, sought out at the local markets each weekend - the smells and flavours inspired my taste buds and quite literally started my food journey, leaving my friends playing football in the streets, my life became about food and flavour.
The result? A Michelin star aged just 25 and the experience to work alongside such luminaries as Heston Blumenthal, Pierre Koffman and David Everitt-Matthias with Eight Michelin Stars between them.
Not being ready to "hang up my knives," I decided to share my vast knowledge and embarked upon running my consultancy, travelling the globe to advise and mentor teams in a wide variety of establishments, from 5-star luxury hotels to bistros and pubs. From multi-unit high-street operators to independents I take great delight in sharing my knowledge and expertise.
